The region’s vineyards produce good-quality wine. Specialities include borshch (beetroot soup) and holubtsi (cabbage rolls). Opera is performed in the ornate theatres of Kyiv, Lvov and Odessa. Ukrainians have a deep-rooted musical tradition and singing is very popular.
